SINGHARE ATTE KA HALWA | सिंघाड़े के आटे का हलवा

A festive Indian dessert made with singhatra atta (water chestnut flour) and almonds. Navratri is a time to go into complete festive mode with all the delightfully tasty dishes.  Here is another such dish named Singhare Ka Halwa, which is scrumptious beyond imagination. The cooking process is just like your regular halwa recipe, just that it is made from water chestnut flour or singhare ka atta.



Singhare ke atte ka halwa recipe - it is usually made on Navratri fasting or vrat or any other religious fasting like Ekadashi or Mahashivratri or Krishna Janmashtami. Water Chestnut or also called as Chinese waterchest nut is derived from from a plant called sedge. It is native to Asia and provides more of a medicinal value when it is consumed. The water chestnut flour is used mainly during fasting season for Navaratri festival.

INGREDIENTS FOR SINGHARE ATTE KA HALWA

·         1 Cup Singhare Ka Atta (Water Chestnut)

·         1 Cup Sugar

·         4 1/2 Cups Water

·         1 Cup Ghee, + 1 Tablespoon

·         1 Tsp Green Cardamoms, Powdered (Elaichi)

·         1/4 Cup Almonds (Shredded)

·         1/4 Cup Cashew Nuts, Halved

INSTRUCTION TO MAKE SINGHARE ATTE KA HALWA

1.      Heat a heavy bottomed pan on medium heat. Buy on Amazon

2.      Add the one cup of ghee, once ghee melts add the singhare flour and roast the mixture on medium heat.

3.      Continue to roast until the mixture begins to release a roasted aroma and changes colour to a roasted brown.

4.      Keep stirring continuously while it is roasting. The mixture will begin to resemble like coarse crumbles.


5.      Turn the heat to low and add the cardamom powder to the singhare flour mixture.

6.      Heat the water and sugar in a saucepan, stirring continuously until the sugar melts. Turn the heat to low and continue to heat the water.

7.      Slowly start adding the prepared sugar hot water to the singhare flour mixture. The mixture will start splitting and curdling.

8.      Continue stirring until the mixture thickens, but yet feels coarse and not like a blob of dough.

9.      Stir continuously for 10-15 minutes on medium heat after it thickens.

10.   Now Add the Shredded Almond, Stir it for 2 mins.


11.   Turn the heat off and let the Singhare Atte Ka Halwa cool, covered it for about 5 minutes.

12.   In another small tadka pan, heat the 1 tablespoon of ghee on medium heat. Buy on Amazon

13.   Add the cashew nuts and roast them until the cashew nuts turn golden brown.

14.   Turn off heat and add the roasted cashew nuts into the Singhare Atte Ka Halwa.

 

Serve the Singhare Atte Ka Halwa with your meal on regular day or on fasting day.
