EASY PANEER FRANKIE ROLL | PANEER KATHI ROLLS

From the cultural capital of India, Kolkata comes a popular street food – Kathi/kati rolls. Kati rolls have said to be originated back in 1932 from a famous Nizam restaurant in Kolkata/Calcutta. 


Traditionally, kati rolls are served with kebab rolled up in layered paratha that are coated with egg and it makes a perfect meal. But today I bring you my version of kathi rolls which is equally healthy and yummy.

The Kathi Roll is one of India’s most popular grab and go street foods. The word Kathi or Kati means stick. Traditionally, the kebab meats were cooked on metal or wooden skewers and hence the word kathi.

 

INGREDIENTS FOR PANEER FRANKIE ROLL –

DOUGH INGREDIENTS:

  • 1 cup Wheat Flour (Atta)
  • ½ cup Maida
  • 3/4 cup Water (appx.)
  • 1 tsp Oil to finish up the dough

PANEER INGREDIENTS:

  • 1 cup Cubed Paneer
  • 1 cup Cubed Capsicum
  • 1 cup Cubed Onions
  • 1/2 teaspoon Garlic paste
  • 1/2 teaspoon Ginger paste
  • 1 Tomato, cut into slices
  • 1 tablespoon Cream
  • 3/4 teaspoon Coarsely pounded coriander seeds
  • 1/2 teaspoon Red Chili Flakes (adjust according to taste)
  • 1/4 teaspoon Haldi (Turmeric powder)
  • 1/2 teaspoon Cumin seeds
  • 1 tablespoon Kastoori Methi
  • Salt to taste
  • 2 tablespoon Oil



TO ASSEMBLE/WRAP:

  • 1/2 cup Chaat Chutney
  • 1 cup Shredded Lettuce
  • 1 small Onion cut into rings
  • 1/2 cup Chopped Cucumber
  • 1 small Tomato cut into circles
  • A pinch of Chaat Masala
  • Few drops of Lemon Juice - to sprinkle on top

INSTRUCTIONS TO MAKE PANEER FRANKIE –

MAKING ROTI:

  1. Take cup all-purpose flour (maida) and wheat flour.
  2. Add 1 teaspoon oil and mix with the help of fingers and Put water and knead a soft pliable dough.
  3. Make equal size balls out of the dough, press, and flatten it.
  4. Dust it with dry dough. Using a rolling pan, make chapaties of it.
  5. Switch on the flame and heat tava to make Frankie sheets. When tawa is hot, transfer the rolled-out roti onto the hot tawa.
  6. Flip and cook until evenly cooked and brown from both the sides by applying ghree.
  7. Fully cooked and puffed up roti is ready. Place it in a container and cover. Repeat the process with rest of the dough.


PREPARING PANEER:

  1. Using a mortar and pestle coarsely pound the whole coriander seeds.
  2. Assemble all the ingredients - cubed onions, tomato and cubed paneer.
  3. Wash and cut capsicum in cubes.
  4. Heat oil in a kadai, add whole chilies, cumin seeds and cubed capsicum.
  5. Stir in salt and mix it well. On a medium flame saute capsicum for 2 minutes.
  6. Add cubed onions, ginger and garlic paste and saute it for another 2 minutes.
  7. Add cut tomato, pounded coriander seeds, Red Chili Flakes, Haldi, and saute for 5 mins.
  8. Add Cubed Paneer, Kastoori Methi to veggies and mix them gently, cook it for 3-5 mins.
  9. Now Add 2 tablespoon cream to the veggies and give it a good stir.
  10. Paneer is ready. Allow it to cool down completely.

 



ASSEMBLING KATHI ROLLS:

  1. Peeled, washed, and cut onions into rings.
  2. Spread green chutney on the roti and Sprinkle lettuce in the center.
  3. Spread spoonful of paneer in the center, Add some onion rings.
  4. Generously spread some more green chutney on top. As per one's taste add lemon juice or chaat masala on top.
  5. Start folding the roti and Secure the edges with a toothpick or wrap the kati roll in wax paper.

 

Warm Paneer Frankie / Kati Rolls are ready, Enjoy it with tea or hot coffee.
